
This past weekend Funk went grocery shopping before I had time to brainstorm dinner ideas and jot some foods down on our shopping list. I hate going into the week unprepared food-wise, but this is a short week for food since we’re heading away for our friends Katherine and Craig’s wedding! So when Sunday night rolled around, I did what any self-respecting person would do when they don’t have anything good in the kitchen to make: breakfast for dinner! Or as Funk likes to call it, “Brinner.” More specifically, French toast for brinner. I have made a fair share of pancakes egg-free but had yet to try French toast the vegan way. Inspired by a Chef Chloe recipe, I set out with these ingredients:
- ½ cup white wheat flour
- ¾ cup vanilla almond milk
- pinch of salt
- 1 teaspoon vanilla
- 1 tablespoon sugar
- heavy dash of cinnamon
1. Whisk all of the ingredients together in a shallow bowl and then drench 6 slices of whole wheat bread in the batter to coat them.
2. Heat oil in large non-stick skillet.
3. Heat toast on the skillet a few minutes on each side until they get nice and crispy.
Top with fresh berries, syrup, jam, or powdered sugar. We realized we had no maple syrup, so we mixed some honey and simple syrup together. We also topped the toast with warm apple slices and cinnamon, cooked in the microwave for about a minute until soft.
Some of my slices crisped better than others and I think the key to good egg-free French toast is to get the bread nice and crisped on the skillet. All in all it was a delicious brinner, but I haven’t perfected this vegan French toast recipe just yet. Have you ever made egg-free French toast? Have any recipe suggestions for me?
