Popcorn Olympics (with ice cream)

Over the past few years, Funk has absolutely mastered the art of stovetop popcorn making. Recently, we learned that Elizabeth’s boyfriend Jesse also perfected his own batch of popcorn, so we knew there needed to be a popcorn showdown with the two of them competing for The Best Popcorn Maker Ever. With the Olympics opening ceremony last Friday evening, we thought it’d be a great night to invite over some friends (aka Popcorn Judges) to watch the Olympic Games…i.e. Popcorn Making.

Our friends brought over a great spread of snacks including chips and salsa, veggies and dip, and fresh watermelon and cherries. I could live off of that spread (plus popcorn) alone. Elizabeth makes a mean Bloody Mary (her key ingredient: pickle juice) and I whipped up two easy batches of ice cream. I started with my basic coconut milk vanilla base for each batch. For one flavor, I took a bag of dark chocolate covered pretzels, crushed them, and mixed them into the ice cream as it was nearly frozen during churning. The rich dark chocolate, creamy vanilla, and salty, crunchy pretzel mix was a mouth watering sweet-and-salty flavor combo.

In my second batch, I blended ½ cup of creamy peanut butter with the vanilla base. Then I added in a container of chopped Trader Joe’s mini peanut butter cups, which I mixed in during the end of the churning process. No words needed.

While we were eating and drinking, the boys got competitive. And serious. They had two totally different methods of cooking their kernels. Funk’s star ingredients are olive oil and truffle salt. Jesse used olive oil with a tiny bit of butter. Both were perfectly popped.

We gave our three judges the taste test and the winner was…

Funk! I’m so proud. And so glad I can request his award winning popcorn whenever I want it. Jesse makes a mean popcorn, too – no burnt kernels and a little butter goes a long way. Good game, guys.

The rest of the night included watching the most peculiar Olympics Opening Ceremony ever. What was with the nurses and kids jumping on beds and Mary Poppins and texting in the 60s? Fortunately the games are totally making up for it. Sunday night I sacrificed (a lot of) sleep to watch the nail biting women’s gymnastics and men’s swimming relay. Women’s floor gymnastics used to be my favorite event but I cannot get enough of the women’s team on the uneven bars and love watching swimming. But my new favorite? Men’s water polo. They’re crazy fit!
