Gnocchi with Tuna Tomatoes and Zucchini

It’s prime time for zucchini and tomatoes, especially if you have a home garden – lucky duck! I paired the summer staples in this easy dish.

Ingredients:

Prepared gnocchi, cooked according to package directions

1 can tuna in water

2 cups cherry tomatoes

1 large zucchini, thinly sliced

olive oil

Cook gnocchi according to package directions. Drain and set aside. Meanwhile, thinly slice a zucchini. I used my mandolin for this so they were nice and thin and evenly cut.

In a large saucepan, drizzle a few tablespoons of olive oil and sauté the zucchini and tomatoes. Next add the cooked gnocchi and flake in the tuna. Add more olive oil as needed and salt to taste.

Usually I love making gnocchi with tomato sauce, sardines and capers but this was a nice light version using fresh summer veggies.
