Since having Zack, I’ve made sure to prepare breakfast meals ahead of time that I can eat with one hand or while juggling a (holy-moly-now-5-months-old) baby. I loved the crockpot oatmeal breakfast cake, but only liked the muffin tin eggs. Since I went back into the office this month, I wanted to have the most ridiculously easy breakfast ever to eat. Ever. And what’s better than a cookie for breakfast? This is it.
2 cups old fashioned oats (bonus points since oats are great for breast feeding mamas!)
2 very ripe bananas, mashed
1/2 cup unsweetened applesauce
1/3 cup peanut butter
3/4 cup raisins
Pinch of salt
All ingredients are ballpark estimates, but I’ve made these three times now and they come out great every time with me just tossing in ingredients.
Preheat the oven to 350. In a large bowl, combine all ingredients. Woop woop! What could be easier?! Make sure to mix vigorously so the egg and peanut butter and bananas get all mixed together and there are no lumps or climbs. I typically mix the raisins in last.
Scoop oatmeal batter onto a Silpat or parchment paper lined baking sheet forming 6-8 medium to large cookies. Cook for about 25 minutes, watching to make sure the raisins don’t burn. Let cool before removing.
One of these cookies plus a piece of fruit each morning for breakfast three weeks in a row and I’m not bored yet! And, they’re pretty darn good cookies (breakfast or not)! The first time I made these I added in brown sugar, but since then I’ve eliminated any added sugar and you don’t miss it at all. Which is a good thing because I’m trying reaaallly hard to cut back on the added sugar in my diet…post about that to come.
