Amazing Avocado Big Hit Contest
Two things get a lot ‘o love in our apartment: avocados and baseball. Funk holds the title of baseball lover and is a huge Red Sox fan and he has made it clear that I will be too, once we’re married. (Is that in the vows???) And I’m a huge avocado fan. Not only do they taste great, but avocados are full of those heart-healthy unsaturated fats and have only 50 calories per ounce. What do baseball and avocados have to do with each other? Not a whole lot, except when Funk was watching the Sox a few weeks ago, I whipped up a fun avocado bean spread to enjoy on crusty chiabatta bread.
- 3 avocados, mashed
- 1 can pinto beans, rinsed, drained and mashed
- 1/2 white onion, diced
- 2 Tbsp lime juice
- 1 tsp buffalo wing seasoning
- salt to taste
Mash all ingredients together, spread on crusty bread, and enjoy! Watching baseball while you eat is optional.
Since Funk has made it clear that in 9 short months, once we say our “I do’s” I will also be a diehard Red Sox fan, I figured I should get into the swing (Ha! Get it?) of things now and become baseball savvy. What better way to do that than to tell you about this exciting contest sponsored by the Mexican Hass Avocado Importers Association (MHAIA)?
For the second season in a row, an All-Star roster of women from around the country have been chosen to create a game day recipe featuring avocados that best embodies the spirit, passion and flavor of their hometown to compete in an online recipe contest. The recipe that earns the most online votes will be named the BIG HIT and earns the title of Avocado League MVP. Is your hometown represented? There are All-Stars from Charlotte, Chicago, Atlanta, Baltimore, Washington, Philadelphia, and New York. Show some love to your home team by voting through October 27th here.
Want to get in on the action too? You can submit your own avocado recipe and a “wild card” recipe will be selected each week to be featured on the BIG HIT site and the winning chef will receive a $100 gift card. Think of how many avocados you can buy with that! Now I know you guys have great avocado recipes – I’ve seen them before! Since avocados make a great addition to soups, sandwiches, salads, and even desserts, I’m sure you’ll come up with a homerun recipe.
