Apple Pumpkin Oat Breakfast Cake

We recently went apple picking and within 24 hours I had a crockpot of homemade applesauce going (just diced apples, squirt of lemon juice and cinnamon stick – heavenly!) and then used my crockpot to make this breakfast cake. I’ve done many variations of this cake in the past, but this is by far the most moist and almost dessert-like, thanks to the sweetness of the many baked apple pieces in every bite. This would be just as delicious with pears.

Ingredients:

3 cups old fashioned oats

2 tsp baking soda

2 eggs, lightly beaten

1 tsp cinnamon

1 can pumpkin puree

3 apples, cored and diced into tiny bits

1/3 cup brown sugar

1 cup canned coconut milk

pinch of salt

Mix all ingredients together until well combined in the pot of your slow cooker. Cook on low for 4 hours. Let cool before cutting and serve warm.

    I love how this comes together, and in the slow-cooker no less, a perfect Autumn warmer 😀 It looks fantastic 😀 x
