Barley with Zucchini and Peaches


The other day I realized, just 15 minutes before I had to pick up Zacky, that I hadn’t cooked dinner. I always cook dinner in advance, so we can spend as much time as possible outside at the park before coming home at the very last minute before a potential hunger meltdown (both him and me). And even with 15 minutes, I was able to pull together this dinner in time. 15 minutes, 4 main ingredients (including two of the summer’s best!). Ready? Go.


1 package 10-min barley from Trader Joes (or about 1.5 cups barley)

2 peaches, diced

1 zucchini, sliced

1 can chickpeas, drained and rinsed

2 tsp garam masala spice blend

2 Tbsp olive oil

sea salt to taste

Cook barley according to package directions. In the last two minutes of cooking, drop zucchini in the boiling water and complete cooking. Drain and put into large bowl. Drizzle on olive oil. Mix in peaches, garam masala and salt. Serve warm.

    Barley is so delicious! And I love the addition of fruit to more savoury dishes, makes the palate curious and curiouser, and it tastes wonderful. Good on you for rattling this up on such short notice 😀 x
