BBQ Chickpeas and Tempeh

I love a good excuse to use this magical BBQ sauce found at Trader Joe’s. It is both sweet and smokey, made with mustard and molasses, and tasted amazing drizzled over chickpeas and tempeh. The meal came together in minutes, but kept us satisfied for hours, thanks to the fiber-filled chickpeas and protein-packed tempeh. We enjoyed it scooped onto a bun, but I think it’d also be fantastic rolled into some tough collard green or flat kale leaves for a burrito-style meal.

1 package of tempeh, diced into small pieces

2 cans chickpeas, drained and rinsed

1 sweet onion, diced

1/4 – 1/2 cup BBQ sauce (preferably Trader Joe’s Carolina Gold kind if you can find it)

Grapeseed oil

Whole wheat buns

In a large saucepan, heat oil and sauté onion until beginning to brown. Add chickpeas, tempeh and BBQ sauce and cook until well heated and coated, about 5 minutes.

Serve over toasted whole wheat buns.

    Mmm barbecue aaaanything is always amazing, this looks fantastic Janel 😀 Almost like a smokey sloppy joe’s, must have been heavenly on those rolls!
