Black Bean Burgers


I was inspired to make black bean burgers after seeing them posted on Oh My Veggies recently. I clicked over to the original recipe on and decided to double the recipe so we’d have plenty of leftovers for the beginning of the week’s dinners. I made a few tweaks, so my simplified recipe is here:

Ingredients (makes 8 patties)

2 (15oz) cans black beans, rinsed and drained

1 chopped yellow onion

1/2 cup chopped white button mushrooms

2 tbsp minced garlic

2 tbsp low sodium soy sauce

1/2 tsp kosher salt

1/2 cup panko breadcrumbs

2 eggs, lightly beaten

A few dashes of dried thyme and oregano

Cooking spray

Burger buns (I used bagel thins)

Preheat oven to 425.

Place beans in a large bowl and fork mash. Stir in onion and next 8 ingredients. Divide mixture into 8 patties.

Arrange patties on baking sheet coated with cooking spray. Bake at 425 for 6 minutes; turn and bake for 6 minutes more.

These were very flavorful and paired with some roasted cauliflower on the side, they were also very filling. I had never tried the bagel thins I found at Trader Joe’s before, but liked using them as a bun because I was able to actually taste the bean burger instead of a big mouthful of bread!

    Janel, these look absolutely fabulous! I remember making some smokey vegan burgers that turned out really well too 🙂

    Making a double batch it perfect! Should you have extras that need used you can dice them up and add them to salads for some extra protein 🙂 Using the bagel as a bun is such a great idea! I gotta try that 🙂

    i can’t believe i still haven’t made my own veggie/bean burgers. I need to get on that
