Black Bean Veggie Burgers


I like having easy meals prepped to send Zacky to childcare a few times each week – ones that don’t need to be prepared specially aside from being cut into tiny pieces. I figured a veggie burger that included beans, veggies and a grain would be a complete meal in one package, pair it with some fruit and my baby had a better lunch than I did! We wound up eating these for dinner one night too and I loved how jam-packed they are with different veggies, quinoa, oats and beans. They absolutely hold up well wedged in a bun and paired nicely with roasted sweet potato wedges.


2 cans black beans, drained, rinsed and fork mashed

1 cup cooked quinoa (I used Trader Joe’s frozen organic pre-cooked quinoa)

1 cup frozen veggie blend (peas, carrots, string beans, corn)

2 eggs, whisked

1/2 cup oats

1 tsp cumin

Preheat oven to 375.

Slightly defrost frozen veggies for about a minute on high in the microwave until a little soft. Chop into smaller pieces using a food processor, if desired. Mix veggies, quinoa and mashed beans with eggs, cumin and oats until combined.

Form into patties and spread on parchment paper lined baking sheet.

Bake for 15 minutes on each side, flipping halfway.

Note: I used 1/4 cup oats and 1/4 cup baby multigrain cereal instead of 1/2 cup oats since this recipe was originally for my little guy. And, I chopped the veggies into smaller bits so he could gum these burgers easily.
