Cauliflower Curry Pizza

Lately I have not been in the mood to cook. At all. Over the weekend we made quesadillas (if you can call it that) in the microwave. And then we ordered delivery from a restaurant that is no more than a quarter mile away from our apartment. We’ve lived in this neighborhood for five years and I never before hit the point where I didn’t want to be in the kitchen so much (or walk down the street two blocks) that I ordered in. Yeesh.

Fortunately this pizza took absolutely zero time to throw together because that’s about all I had the tolerance for. I love mixing up regular tomato pizza sauce with things like salsa or pesto, but this may be a new favorite pizza sauce substitute: curry simmer sauce. Paired with a pre-cooked “crust,” bagged spinach, precut cauliflower and some soy cheese, dinner practically made itself.

1 pre-made ciabatta “pizza crust” from Trader Joes (or any pre-made crust)

1/2 jar curry simmer sauce

A couple handfuls of baby spinach

A cup or two of cut cauliflower florets

Shredded soy cheese


Preheat oven to 350. Spread sauce over the crust. Layer spinach on top of the sauce, then sprinkle cheese on top so the spinach is hidden under the cheese (which helps it cook without burning). Top with cauliflower florets. Bake for about 10+ minutes until cheese is melted.

    I totally have those days where cooking dinner or anything for that matter is gonna happen. But having recipes like that one makes it simple! I love the idea of the curry flavor! Yummy!
