Cilantro Salmon Burgers

Vacation seems to be the only time I get to catch up on my magazine subscriptions. Funk and I just returned from a sunny trip to Puerto Rico (post to come!) and I packed all of my unread Eating Well and Whole Living magazines for the flight and beach reading. It gave me the opportunity to rip out a good collection of must-try recipes, including this one for Pink Salmon Cakes that caught my eye because they don’t use eggs as a binder.

They were insanely easy to make! I didn’t have fresh cilantro on hand so I used a few cubes of my frozen Dorot Cilantro and I used an egg-free mayo, as well as Earth Balance “butter” for the pan.

If you’re looking for an easy, inexpensive, and delicious way to get fish in your diet (the heart-healthy recommendation is twice a week), this recipe is it.

We paired the burgers with french fries and curried cauliflower on the side (another recipe I ripped out while on vaca!). My photos didn’t come out very appealing, but check out this recipe, where you coat a head of cauliflower with a curry sauce and simply microwave it for nearly 10 minutes. It’s flavorful and cooked perfectly!
