Corn and Red Pepper Chowder from Oh My Veggies

IMG_6810.jpg

When Funk is out of town, that means I can eat things like massive bowls of soup for dinner and entire bags of roasted brussels sprouts. Not that Funk won’t eat those. He does. But I can eat them daily. Him? Not so much. So while he was away on business recently, I made a version of this Corn and Red Pepper Chowder from Oh My Veggies and Oh My Goodness it was so good! It gave me a good reason to buy smoked paprika – a spice I didn’t have in my collection and now I’m glad that I do because it adds, well, a nice smokiness to the soup. Instead of using vegetable broth, I used Trader Joe’s Organic Roasted Red Pepper and Tomato soup broth, which only enhanced the flavor. I love the thickness of this soup and of course its ease of preparation. For the full original recipe and instructions, click here. My ingredients are listed below.

Ingredients:

2 Tbsp olive oil

1 medium yellow onion, diced

1 medium red bell pepper, seeded and diced

1/2 tsp smoked paprika

1/8 tsp cayenne pepper

1 tsp salt
