Corn and Red Pepper Chowder from Oh My Veggies


When Funk is out of town, that means I can eat things like massive bowls of soup for dinner and entire bags of roasted brussels sprouts. Not that Funk won’t eat those. He does. But I can eat them daily. Him? Not so much. So while he was away on business recently, I made a version of this Corn and Red Pepper Chowder from Oh My Veggies and Oh My Goodness it was so good! It gave me a good reason to buy smoked paprika – a spice I didn’t have in my collection and now I’m glad that I do because it adds, well, a nice smokiness to the soup. Instead of using vegetable broth, I used Trader Joe’s Organic Roasted Red Pepper and Tomato soup broth, which only enhanced the flavor. 2 Tbsp olive oil

1 medium yellow onion, diced

1 medium red bell pepper, seeded and diced

3 medium Yukon Gold potatoes, diced (about 1 pound)

4 cups frozen sweet corn kernels

4 cups red pepper tomato soup from Trader Joes

1 tsp cumin

1/2 tsp smoked paprika

1/8 tsp cayenne pepper

1 tsp salt

1 cup soy milk

salt and pepper to taste

chopped red bell pepper and corn kernels to garnish
