Dessert Eggrolls: Pumpkin & Pear
Remember last week when I made these veggie eggrolls? (Thanks to everyone in the twitter and blog world…and my mom… who told me they went out and made them after reading my post!) Well I had some leftover wrappers to use so I decided to stuff them with a dessert filling this time around, starting with my fall-favorite, Trader Joe’s Pumpkin Butter (yummm).
I made a mixture with a few scoops of pumpkin butter, some diced pear, and about 1/2 cup of canned pumpkin.
I rolled ‘em up, dashed some ground cinnamon on top, and baked them for a few minutes.
Ohhhhh yum. They weren’t as crisp as my veggie eggrolls (I think because the filling was so goopy), but I kinda liked them soft. They made a great fall dessert, and um, breakfast too – hey with pumpkin and pears, it’s pretty darn healthy!
