Fresh Tabouli Salad

I’m loving Trader Joe’s new 10-minute whole grain packs, like the 10 minute barley and 10 minute bulgur. Usually I use my rice cooker to cook whole grains but these 10-minute whole grains rival the rice cooker when it comes to easiness to prepare. I offered to bring a whole grain salad to our friends’ house for their 4th of July BBQ and wanted to make a cold tabouli salad since it was a super hot day out. I didn’t take any exact measurements so here goes:

1.5 cups 10-minute bulgur

1 container cherry tomatoes, halved

1 large cucumber, diced

1 white onion, diced

bunch of parsley, chopped

bunch of mint, chopped

olive oil

white balsamic vinegar

salt

Cook bulgur according to package directions. Meanwhile combine the onion, tomato, cucumber, parsley, and mint. When the bulgur is cooked, drizzle on a few tablespoons of olive oil and vinegar and let cool.

Combine bulgur with veggie mixture and serve cold.
