I’m not really a big coffee drinker…anymore. See, I really do love it, but I don’t love the caffeine. About a year and a half ago when I was drinking coffee near-daily, I cut it out of my life, to see if I could get through a morning decaffeinated. And I found not only was I still fully functioning, but I didn’t crash anymore mid-afternoon! So I swapped coffee with herbal tea (I love anything rooibos) and once in a blue moon, like when I have to get up at 5:30am to speak at a conference (ahem, Fitbloggin), I enjoy a cup o’ Joe. If I’m really craving a coffee taste, I drink decaf, because yes, I actually do like the taste of coffee.
I also love the taste of fancy coffee beverages – cinnamon dolce, sugar cookie coffee, French vanilla – but stay far away from them so I don’t guzzle 800 calories out of my coffee cup. So I was really excited to see this recipe for a Frozen Mochaccino in Eating Well magazine, my favorite, and couldn’t wait to give it a try.
I had to start the night before and brewed a cup of very strong decaf coffee, before turning the brew into coffee ice cubes. Like my adorable ice cube tray? This was messy, as I absolutely spilled coffee in the process and woke up to find frozen coffee all over my freezer and coffee stains on the floor but it was worth it.
I blended the coffee cubes with vanilla soymilk, cocoa powder, maple syrup, and vanilla extract in our Vitamix, and added a few extra plain ice cubes so it was a thicker drink. Check out the full recipe here.
Holy coffee beans. It was incredible. It tasted like coffee ice cream! Funk was crazy impressed with it, too, which made me look like a star chef. Thank you Eating Well for your super simple, tasty recipes! My only regret is not making more coffee ice cubes so we could enjoy this every day. Now I know what we’ll be drinking on hot, lazy weekend mornings this summer.
