Homemade Salted Brownie Ice Cream

Ice cream to me is like wearing white pants. You have a limited time to enjoy it, from Memorial Day to Labor Day. I have no interest in eating ice cream outside of those summer months, and while most desserts tempt me year-round, ice cream does not. With Labor Day creeping up (how the heck did that happen?!) I figured I had one more good homemade ice cream recipe in me that I needed to whip up.

I have a slight obsession with salted desserts: salted caramel, salted chocolate chip cookies, and salted brownies. Yes, salted brownies. On that note, Taza’s salt and pepper dark chocolate is a must-try. But back to the brownies. Trader Joe’s has these mini salted brownie bites* that I used to buy a few years ago, but had to stop, because I would eat far too many in one sitting. But it’s perfectly fine to include the addictive dessert in an ice cream!

I whipped up my homemade vanilla ice cream base, and while it was churning, I crumbled in the brownie bites. The only problem was they really didn’t taste salted at all. They must have been sitting on the shelf at Trader Joe’s a day too long because the salt seemed to have absorbed into the brownies, and you couldn’t really taste it. So I added in a few pinches of sea salt while the ice cream was churning to get that sweet and salty flavor.

If there is an ice cream flavor to end the summer with a bang, this one is it. There were gooey and crumbly brownie bits in every bite and the sea salt wasn’t too overpowering. Don’t quote me on the “not eating ice cream past Labor Day” rule I have. This flavor may be worthy of a year-round dessert.

    I love those salted brownies! I can’t keep them in the house because I can’t keep myself from eating them. But, I frequently bring them to parties so I can have a couple before they all get devoured.

    Those sea salt brownies are SO good! And I bet they’re even better added to ice cream. :)
