Homemade (vegan) Bread

I did it! I fi-na-lly successfully made bread in my bread machine! Funk’s grandma gave me her old bread machine a few years ago, and after two failed attempts at bread, I put it away in the basement. I wanted to give it another try this weekend, since everyone says bread machines are totally goof-proof (I defied the odds). Unfortunately every bread in the book the machine came with included butter, eggs, or dry milk, making the bread vegan un-friendly. After some googling, I found this bread recipe, and while I’d rather stick with whole wheat bread varieties, I thought the white bread would be a safe place to start.

Four hours later and I had the most perfect, warm, crusty loaf of bread. Ever. I couldn’t wait long before taking the bread knife to it.

I realized that the last few times I tried the machine, I didn’t notice there was a separate canister to add in the yeast. That is due to the fact that I am terrible at reading directions. As in, I don’t read directions. But like everyone said – if you follow the directions, you can’t fail!

I have already used a Bob’s Red Mill gift certificate I got from Deanna to purchase some whole wheat bread flour and rye flour. Can’t wait to make many more loaves in the future!

    THe book that came with my bread maker (also handed down to me) has lots of vegan bread recipes. I’ll send you some. Some whole wheat even!

    Hi Janel … try Trader Joe’s “white whole wheat” flour to make whole-wheat bread that gives you fiber without the grittiness of some other brands. It’s easy to just swap out half of the regular flour for the TJ’s brand in any bread recipe. I do it all the time in my bread machine — I use half bread flour, and half TJ’s white whole wheat. Even my son (who’s extremely picky) can’t tell the difference. Happy holidays!

    I LOVE my bread machine! I bought a few whole grain bread cookbooks and made a loaf last night! Even the 10-grain recipe called for 2 cups of white bread flour, but I was feeling pretty daring after all the loaves I’ve made so I replaced 1 c of bread flour with 1 c of whole wheat pastry flour. It’s a little dense, but otherwise awesome! I have lots of vegan recipes that I’ve been meaning to blog. I’ll let you know when I finally get to it.
