Massaged Kale Salad with Apples, Grapes and Walnuts

Last Saturday night, Funk and I had dinner plans. Knowing I’d be indulging a bit at dinner, I wanted to jam-pack my lunch with fruits and veggies. With a half of a bag of curly kale in the fridge that was about to go bad, I decided to make a massive massaged kale salad with sweet and crunchy toppings. Have you made a massaged kale salad yet? It is so simple and strangely therapeutic! There is something about drizzling olive oil over your curly, crinkly kale and going at it with your bare hands, literally massaging the leaves, that takes away the stress of the day. Massaging the kale breaks down the cell walls so it leaves the kale with a cooked texture without needing to cook it. It’s much heartier than spinach leaves, so I like using kale in a salad that will actually satisfy me.

I used a topping of diced apple, walnuts, red grapes, and Marzetti Simply Dressed Champagne salad dressing. Usually I dress my kale salad with olive or sesame oil and some salt and pepper, but the Champagne dressing took this salad to another level. I was mildly sweet and tangy, which paired perfectly with the grapes and apple in the salad. I love a good vinaigrette dressing, and love even more that this one has ingredients I recognize.

Ingredients:

Curly kale – lots of it, rinsed and cut into bite sized bits. I probably used 4 cups

½ apple (I used Fuji) diced

10-15 red grapes, sliced in half

2 Tbsp walnut pieces

2 Tbsp Marzetti Simply Dressed Champagne Salad Dressing

1 tsp olive oil

1. Put kale in a large bowl and drizzle on olive oil. Using your hands, massage the kale for about a minute until it has wilted and darkened in color.

2. Top the salad with apples, walnuts, and grapes. Drizzle on salad dressing.  

This was a massive beast of a salad. It’d probably serve two normal people for a meal, but I enjoyed the whole thing. I love fruit in my salad, and especially loved the soft, juicy grapes alongside the crunchy, sweet apples. Massaged kale salads are one of my go-to meals when Funk isn’t home for dinner, and as much as I’d prefer to dine with him, I’m kinda looking forward to another solo dinner night so I can recreate this meal-sized salad.
