Rice Cooker “Fried” Rice


I’m in love with my rice cooker now more than ever after having a baby. Quick, easy meals are where it’s at. This 1-pot rice dish couldn’t possibly be any easier.

2 cups brown rice

1 bag shredded carrots

1 bag frozen peas

2 squares pre-marinated teryaki tofu (sold at Trader Joe’s, Whole Foods)

A few glugs of a sesame ginger teriyaki sauce, or whatever variety you like

Put two cups rice and 4 cups water in your rice cooker. My rice cooker comes with a steam basket that steams veggies at the same time it cooks rice, so I dumped the bag of shredded carrots in there. If yours doesn’t have that, you can just dump the carrots with the rice and add a little bit more water. Set the rice cooker to brown rice and let it do it’s thing. When the rice is cooked, mix the carrots into the rice, add in a bag of frozen peas and diced tofu. Then mix in some teriyaki sauce until it’s well combined and there you have it. Un-fried fried rice with absolutely zero prep time (except for dicing the tofu, but that’s easy!).
