Shredded Sauteed Brussels Sprouts
While at Wegman’s, I picked up this bag of shredded brussels sprouts. Brussels sprouts are one of the few veggies that I absolutely love, but Funk does not. He’ll eat them, but not too happily. I thought if I prepared them in this shredded form, instead of my usual roasted brussels sprouts, he either a) might not even notice they’re brussles sprouts or b) will suddenly love them, just prepared differently.
I sauteed the sprouts in some olive oil with salt and pepper. Nothing fancy. To sweeten up the slightly bitter flavor of the brussels sprouts, I added in a handful of dried currants. A few minutes later this simple side dish was done. I loved it! Funk? Well, Funk did not. I have to give him credit for trying, but he concluded he doesn’t like brussles sprouts and never will. Ah well, more for me. If you’re a b.s. fan, you’ll love this insanely easy veggie side dish.
