Strawberry Fennel Salad




Over the weekend I headed to Jess’ place for her birthday BBQ. I volunteered to bring a green salad for the occasion. Do you like fruit in your green salad as much as I do? It’s the sweet savory combo that I love, and will stick fruit (fresh or dried) in a salad any chance I get. I kept this salad basic because each ingredient had its own strong flavors.

Ingredients:

Bag of arugula

Bag of baby spinach

Container of strawberries, sliced

1 fennel bulb, thinly sliced

Champagne vinaigrette dressing

All together, this salad was peppery, earthy, sweet and licorice-like. Another great dressing option for this salad would be a fruity dressing like this Strawberry Poppyseed dressing.

We enjoyed a great spread, including vanilla cupcakes, homemade raspberry sorbet, and Jess’ famous buffalo tofu. She needs to do a step-by-step post on this addictive spicy tofu, but just know that it rivals my once-favorite buffalo tofu appetizer from Christopher’s.
