Quinoa, Mango and Black Bean Salad

This is another tasty one-pot dish! My apologies for the sideways, poor-quality photo. I swear the food is better than the picture!

I modified this Eating Well recipe for Quinoa, Mango and Black Bean Salad using just the main ingredients. I love fruit in my savory salads and mango is such a sweet summer fruit…even if I did use the frozen version (cheaper and already cut!).

Ingredients:

2 cup tri-colored quinoa, prepped in the rice cooker with 4c water

1 bag frozen, pre-cut mango

1 red bell pepper, diced

1 can black beans, rinsed

a few dashes of ground ginger powder

3 Tbsp sesame oil

3 Tbsp rice wine vinegar

1/2 cup orange juice

Salt to taste

Once the quinoa was cooked and cooled, I just tossed in all the rest of the ingredients and mixed to combine. I let the flavors meld all day, and enjoyed it cold for dinner. This is a great grain salad to bring to a summer BBQ!

    I love quinoa!
    And don’t worry, quinoa is a pesky thing when it comes to having photos taken of it 😛 I am sure this is fantastic though, and I might just try and make it!

    I made a similar version to this the other night. I took the leftovers and put them in wraps for lunch. It was delicious!
